Picked off a tally of vineyard blocks on the Jones Road property further down Mornington Peninsula, the fruit is treated to extended hang time for a fuller, luscious Pinot Gris. Vinified through the action of wild indigenous yeasts, without any crushing or destemming, a portion in seasoned French oak barriques. Artfully crafted and tastefully assembled, a savoury sauvage style, the palate reveals a delicious core of flower blossom and apple nut flavours, unravelling more spice complexity as it finishes, engaging, amenable and urbane.

A consistent performer on the wine show circuit as it hails from a microclimate that is ideally suited to growing Chenin Blanc grapes with vibrancy and distinctive varietal characters. John Gehrig is a fourth generation winemaker, a descendant of Victoria's oldest winemaking family which settled in the late 1850s at Barnawartha at Victoria's northeast. From Chenin Blanc grown on the Gehrig family estate in Oxley along the King River which lies between Milawa and Glenrowan, a pure varietal wine with a full palate, exquisite balance and clean crisp finish.

Duval's aim with Plexus MRV is to promote a vibrant expression of fruit aromas from the interaction of the three varieties, to build structure and texture on the palate, rather than the blend's familiar acid crispness.

Pinot Gris really loves Marlborough. The challenge is to achieve complete fruit ripeness without the sugar levels going through the roof, which would result in high alcohol and residual sugar, not the style Isabel aims for. In early summer, serious bunch thinning is required, even after laying down lower bud numbers at pruning time. Too much sun on the ripening bunches can thicken and over colour the skins. The Isabel team take great efforts to ensure that each vine is treated to the right amount of sunshine, for perfect harvests of superbly ripened Pinot Gris.

A new wave and the next big thing? Been around forever actually. Great Pinot Gris can only come from fine vineyards. There are two distinctive styles in Australia, zippy with lemon freshness and crisp acidity or the richer, textural, full bodied type. Both share an attractive mineral element that adds complexity. For all you anything but chardonnay drinkers, here's a generously flavoured white, derived from red coloured grapes, crisp and refined, born and bred for food, goes great with charcouterie, fresh seafoods or highly spiced cuisine.

The pick of Pinot Gris from the three finest Hugel blocks on the propitious chalky terroirs of Pflostig in Riquewihr. Vinifications are all gently gravity fed in and out of traditional fermentation barrels and vats until a light filtration and bottling in the following Spring. One of the world's most cherished wines, founder Hans Ulrich Hugel was chairman of the Riquewihr Corporation of Winegrowers during the 1640s. The Hugel estate vineyards have remained in Riquewihr ever since. Unique mesoclimes yield a distinctive style of Pinot Gris, richly flavoured yet charmingly dry, a true gastronomer's delight which calls for cuisine. The great speciality of Alsace, it is only here that the piquant aromaticness and decadent richness of Gewurztraminer achieves such opulence. A long cool growing season is essential, the temperate yet sunny days and clear chilly nights of Riquewihr, ripen Gewurztraminer at a slow steady pace, infusing grapes with acrid florals, turkish delights and maghrebi spice. Pungent yet suave, it can be enjoyed on its own but makes a marvellous accompaniment to full flavoured cuisines, smoked meats and curries, tanjin or well spiced faire.

The Hoddles Creek property is a highly challenging site to manage, the steep slopes and temperate climes however, yield the finest Yarra Valley Pinot Gris. Nothing is done by half measure, the viticultural team afford great reverence for their vines and treat their fruit with respect. Grapes are selectively sorted and treated to a minimalist, old world vinification, foot stomped and chilled for a term of skin contact, pressed into pre loved oak barriques for timely completion of ferments. Pinot Gris for its own sake, a measure of stalkiness and fine grape tannins in exquisite balance.

A pure varietal wine from grapes grown by David and Annette Innes at Littlehampton. Viticulture was first established in the Adelaide Hills in 1839 by John Barton Hack at a place near Mount Barker, just five kilometres from Littlehampton. It has been recently rediscovered as a winegrowing area. Littlehampton is an ideal site to practice organic viticulture, and responds well to biodynamics for keeping the vines healthy. Pinot Gris has been well received by the soils and climes here, where it ripens to plump varietal flavours and a judiciously crisp acidity.

When George Poppa Gunn first settled in 1920, Hawkes Bay was a farming region where great skill and experience were required to compensate for the poor soils and rather dry conditions. After sixty years of struggling to eke out an existence, providence spoke to the Gunn family with the epiphany that their farm on the banks of Ngaruroro River at Hawke's Bay was Sol superbe for the production of the most splendid, award winning wines. Predominately from the Zerk Vineyard, owned and operated by a fourth generation Barossa grower who knows his Semillon very well. As the vines are over seventy years old, they produce grapes with great depth, flavour and complexity. The Viognier is sourced from the cooler climate of the Adelaide Hills, to blocks that are ideally suited to this uniquely aromatic varietal.

The Adelaide Hills make marvelous Pinot Gris and Grant Burge retain the finest. Treated to a long cool ferment, a third of the wine is sent to seasoned French oak barrels for vinification and a spell of maturation on gross sediments, infusing textural richness and mouth watering complexity. Grant Burge can trace a family history in Barossa viticulture which dates back to 1855, he is friends with the best growers and retains access to the choicest fruit. The Adelaide Hills were home to the earliest commercial vineyards in the colony, they remain home to our nation's most distinguished vineyards and yield parcels of the most exquisite Pinot Gris in the nation.

The thrill of a new vintage is what keeps the Giesen team going. It's all about nurturing the vines to yield parcels of the most vibrant fruit. While Giesen retain a comprehensive host of good vineyards throughout the greater viticultural precincts of Aotearoa, it is the aim of the winemakers to ensure that nothing but the finest Pinot Gris grapes are considered for inclusion.
